  • 2 cups luke warm water warm, but not to hot!
  • 2 Tbsp yeast
  • 2 Tbsp honey
  • 2 Tbsp vegetable oil
  • 2 tsp salt
  • 5 cups all purpose flour
  • 1 egg beaten, to brush over dough before cooking
  • toppings and seasonings of choice

  1. Preheat oven to 400 degrees.

  2. In a stand mixer or deep bowl, combine the warm water and yeast. Let sit 5 minutes to proof the yeast. ( You will know the yeast is still active if it begins to look kind of foamy after 5 mins.)

  3. Add the honey, salt, oil and 2 cups of the flour and mix thoroughly to combine.

  4. Add remaining 3 cups of flour and mix until the dough pulls away from the sides of the bowl.

  5. Let dough rest 10 mins.

  6. Begin making your creation…We use Semolina underneath the dough to prevent the dough from sticking to the prep surface as we roll it out. it also keeps it from sticking to the pizza pan (do not use flour, it will change the consistancy of the dough and leave a very powdery raw flour taste on the bottom of the pizza) .

  7. For calzones, divide dough into 9 evenly portion dough balls and roll each dough ball into a 8"-9" circle. Fill with desired sauce and toppings, leaving 1" around the edges dry. Fold dough over and pinch edges to seal. Brush the top of calzone with egg and sprinkle with desired seasoning. Bake for 18-20 mins or till golden, in 400 degree oven.

  8. For pizzas, divide dough into 3 evenly portioned dough balls and roll each dough ball into a 14" circle. Place on pizza pan (brush pan with olive oil before placing on the dough for a crispy crust. Top with sauce, cheese and toppings of your choice and Bake at 400 degrees for 15-20 mins. or till crust is brown and cheese is melted.

  9. For bagels, divide into 18 evenly portioned dough balls. Shape into a bagel shape by rolling into a short thick rope and connecting the ends together and pinching to seal. Next dip into a baking soda bath (12 cups of boiling water and 2 Tbsp baking soda) for 30 seconds (only). Place bagels on a baking sheet, brush with beaten egg and bake at 425 degrees for 13-16 mins till golden.
